My wonderful mother used to make the most amazing potato salad, I don’t know if she had the special touch or what but this salad is AMAZING!!! I don’t always get it correct in my opinion but when I make it people love it! If you don’t like the potato salads that are heavy with just mayo then this one is for you. Put in some yellow mustard, pickle juice (yes, pickle juice) with a bit of mayo and you have a wonderful dressing. Sprinkle some fresh dill and it even makes it all that much better!
Tip: Add a sage leaf to make it pop with some color.
Serve with some grilled red & yellow peppers and a beautiful table setting!
Another great side would be a beer bread, this is a sure crowd pleaser.
Finish off the plate with some grilled chicken and you have a feast!

Just Like Home Potato Salad
Great for backyard summer BBQ's or a side dish to take to a potluck!

ingredients:
Just Like Home Potato Salad
- 4 large russet potatoes
- 1/2 yellow onion finely diced
- 2 celery ribs sliced
- 2 hard boiled eggs
- 1/4 cup diced pickles
Mustard Pickle Dressing
- 1/2 cup mayo (I use mayo with olive oil or vegan)
- 2 tbs yellow mustard
- 1 tbs fresh chopped dill
- 1 tsp garlic powder
- 2 tbs pickle juice (maybe more depending on consistency)
instructions:
1. Clean and dice the potatoes, not small but in about 1/2 inch cubes
2. Boil potatoes in salted boiling water until a fork can go through
3. Drain potatoes, then cool to room temperature
4. Mix all dressing ingredients together, do not make the dressing too runny or too thick. If it is too runny add more mustard or mayo, if it is too thick add more pickle juice
5. Dice celery and onions then put into bowl with potatoes
6. Pour dressing over salad mixtures slowly, do not pour all at once, make sure to coat evenly
7. Slice eggs and top over salad for larger egg chunks, if you want it mixed throughout put in when mixing celery and onions
8. Sprinkle fresh dill all over and serve
