About Lavonne

Lavonne Cimbak is the founder and chef behind Sage Bleu Catering. Her career began in high-pressure hospitality environments where preparation, timing, and consistency were expected as a baseline. That training shaped how she approaches events today, with an emphasis on clarity, discipline, and realistic planning rather than improvisation on-site.

Since founding Sage Bleu in 2017 and establishing the business on the coast in 2019, Lavonne has built a reputation for calm leadership and thoughtful execution. She works closely with clients to design menus and service plans that make sense for the setting, guest count, and purpose of the gathering. Her role extends beyond food, often guiding decisions around timing, service style, and logistical considerations so events unfold smoothly without unnecessary complexity.

Lavonne is known for being direct, responsive, and steady throughout the planning process. Clients frequently note how supported they feel, particularly when planning from out of town or working in venues that require additional coordination. She values clear boundaries and realistic expectations, believing those are essential to delivering consistent results and protecting the guest experience.

Her approach is shaped by both professional training and personal values. Lavonne grew up deeply connected to food and agriculture through 4-H, where she showed livestock and competed in food projects. That early foundation continues to influence her respect for ingredients, preparation, and work done correctly rather than hurried or performative. Outside of events, she values time outdoors, quiet routines, and pursuits that require patience and focus, including indoor skydiving, which she approaches with the same humility and persistence she brings to her work.

At Sage Bleu, Lavonne remains closely involved in every event. Clients work directly with her throughout planning, and she is present on-site for execution. The result is a catering experience shaped by experience, consistency, and care rather than scale.

Jen’s passion for hospitality was shaped early on, growing up in a large family where gatherings were meaningful and thoughtfully crafted. While she enjoys being at the table, her true calling is behind the scenes, bringing events to life with care and precision. She thrives on building genuine relationships with clients, learning their stories, and guiding them through the planning process with ease.

After relocating to the Oregon Coast in 2019, Jen connected with Sage Bleu Catering through a chance coffee meeting with Lavonne, sparking a creative partnership that continues to flourish. Together, they approach each event with the same goal: how can this be extraordinary?

Known for her creative, genuine, and dedicated nature, Jen takes pride in allowing clients to stay present while she manages every detail. Inspired by music, art, nature, and her daughter Roza, she brings warmth and intention to every celebration. At the end of each event, she reflects on the day with a full heart, energized by the moments, challenges, and joy that make her work so meaningful.

Meet Bob

Kitchen & Event Support

Bob serves as Sage Bleu Catering’s Kitchen and On-Site Catering Chef, bringing a strong work ethic, warm hospitality, and team-focused energy to every event. His passion for the industry began in his early restaurant jobs, where he discovered the camaraderie and collaboration that come with working together to create memorable guest experiences.

What Bob loves most about hospitality is the people, both the guests and the team members, who make each event possible. He takes pride in creating an atmosphere where thoughtful service, strong teamwork, and attention to detail come together seamlessly. At Sage Bleu Catering, he especially values using fresh local ingredients, a commitment to quality, and the opportunity to travel to unique locations while helping to create unforgettable events.

Known by teammates as hardworking, friendly, and fun, Bob approaches guest care with genuine hospitality, always anticipating needs and creating a welcoming environment for everyone involved. Inspired by the example set by his grandparents and motivated by his wife and daughter, he brings dedication and heart into everything he does. At the end of a successful event, Bob feels a rewarding sense of accomplishment, the kind that comes from a job well done and a team effort worth celebrating.

Meet Shane

Jack of All Trades

Shane plays a dynamic, all-hands-on role at Sage Bleu Catering, often describing himself as the “lead yes man,” BBQ king, and go-to support behind the bar and in the kitchen. Drawn to the fast-paced, ever-changing nature of events, he thrives on problem-solving in the moment and finding ways to elevate each client’s vision.

He especially enjoys the energy of “go time” and the opportunity to work with a wide range of people, bringing both leadership and a friendly, attentive presence to every event. Shane takes pride in being part of the Sage Bleu team, where a strong sense of family and commitment to quality and detail set the standard.

With a “listen first, act second” mindset, Shane ensures guests feel taken care of from start to finish. Outside of work, he’s inspired by giving his dog the best life possible, and at the end of a successful event, he embraces that unmatched feeling of exhaustion paired with pride, knowing it all came together.

Meet Tyler

FOH Bartender Kitchen Prep

Tyler is a key part of the Sage Bleu Catering team, supporting front-of-house service, bartending, and kitchen prep with a polished and energetic presence. Drawn to hospitality for its blend of creativity, connection, and fast-paced energy, he has grown his experience over the past five years into a true passion for the industry.

He finds the most fulfillment in watching events come together seamlessly, knowing he played a role in creating a memorable experience for each guest. Tyler values being part of Sage Bleu for its supportive, team-focused environment, where he continues to learn, grow, and refine his skills while working alongside people who care deeply about quality and execution.

Known by teammates as funny, outgoing, and fabulous, Tyler brings both personality and professionalism to every event. His approach is attentive, proactive, and detail-oriented, always anticipating guest needs to ensure a smooth and welcoming experience. Inspired by building a fulfilling life and appreciating everyday moments, Tyler finishes each event with a sense of pride, knowing he helped create something truly special.
